A recipe from Cookery School at Little Portland Street in London.

These brownies are absolutely delicious, so say the folks at Cookery School at Little Portland Street.


75g/3 ozs dark chocolate
75g/3 ozs butter
¾ cup sugar
2 eggs
½ cup flour
½ teaspoon baking powder
Pinch salt
1 cup coarsely chopped pecan nuts if desired


1. Melt the butter and chocolate together in a saucepan over a very low heat.

2. Meanwhile beat the eggs until just frothy but do not over beat.

3. Add the sugar and continue to mix together until well blended.

4. Add baking powder and salt to the measured out flour.

5. Add the melted butter chocolate mixture slowly to the beaten eggs and sugar beating the mixture all the time.

6. Then add the dry ingredients to the chocolate mixture and mix in gently until blended.

7. Finally add the chopped nuts to the mixture. Mix in well.

8. Pour the mixture into a greased 8" x 8" baking dish and bake in oven 350ºF/180º for about 25 minutes.

9. Cut into 9 squares (ie 3 x 3) and eat either warm or cold. The middle must be slightly chewy.
