Take a break from the heatwave with these top recipes for chilled soup.

Feeling hot? Yup, us too. We’re just not used to these sizzling conditions in the UK – not that we’re complaining or anything. In fact, this heatwave is the perfect excuse to make some chilled soup.

Here are some of our favourite recipes.

Gazpacho by Nigel Slater

It’s a classic and it never gets old, nope, there’s nothing quite like a gazpacho on a hot summer’s day, and good old Nigel Slater’s recipe is as good as any we’ve found anywhere.

Chilled pea soup with fried ham croquettes by Stevie Parle

Chef, restaurateur and food writer, Stevie Parle hits the nail on the head with this summer reinvention of the classic pea and ham soup.

Chilled red pepper soup with sour cream by Ottolenghi

A master of soup (amongst many other things), Ottolenghi comes up trumps with this easy crowd-pleaser – an ideal summer starter for that next lunch or dinner party.

Ajo Blanco by Delia Smith

Gazpacho’s older cousin, this cold almond soup is an Andalusian favourite and perfect for hot, lazy days. Delia shows us how it’s done.

Chilled Lettuce Soup by Hemsley + Hemsley

If you are sick of salad but have a glut of lettuces to eat, this is an unusual (but delicious) way to use them up. Cool, refreshing and packed full of vitamins, it’s a novel way to make lettuce sing.

Vichyssoise by S

Cold potato might not sound all that appealing but when it is served as a vichyssoise…. Indeed, this was the dish that started the late chef Anthony Bourdain’s long love affair with food. Try this recipe from Simon Hopkinson for Country Life (the anchovy toast is a great addition).
