Once upon a time a hipster in Shoreditch did something crazy. He mashed up some avocado on toast and put a poached egg on top. Soon, no self-respecting brunch menu was complete without avocado. A new generation of ‘clean-eaters’ started tweeting and blogging about them. They popped up all over Instagram and Pinterest. Mothers started weaning their babies on them. They appeared chocolate puddings and ice-cream. A food trend was truly born.

Alas, our days of profligate avocado-consumption could and should be drawing closer as avocado prices continue to rise and that's without factoring in its appaling eco-credentials. Curiously though, it's a habit that's hard to kick as you find them sneaking into your shopping basket without you realising.

And so, to pay tribute to this once-humble fruit, we’ve rounded up some of our all-time favourite avocado recipes. All hail the avocado!

Avocado on Toast with Poached Egg (and optional kale tapenade)
