Makes 1 litre of sorbet
Ingredients
450g raspberries
150g water
125g caster sugar
25g Glucose powder (or 25g caster sugar)
1 tbsp lemon juice
Method
1. Add the sugar and water into a pan. Heat until boiling. Cool in a cold-water bath. Meanwhile make a raspberry coulis, either by using the Magimix Juice Expert 3 with Extra Press fitted, or by blitzing in a food processor and then passing through a sieve. Add the lemon juice and cooled sugar syrup.
2. For best results chill the mixture in a sealed container in the fridge until it reaches 10C or below (3-4hrs).
3. Place the mixture into the Gelato Expert on the sorbet/ice cream setting. The machine indicator light will flash slowly once the desired consistency is reached.
