This is the perfect weekend bake, the smell of freshly baked bread, comforting cinnamon and festive mince meat. We love the cream cheese frosting, which make the rolls even better.

It might be cold outside, but the kitchen is warm and these buns are the perfect start to the day.

Ingredients



200ml warm milk
7g dried yeast
2 large eggs
80g salted butter
100g caster sugar
1tsp salt
550g plain flour

Filling



200g mince meat
120g salted butter
2tsp cinnamon

150ml double cream

Frosting



250g cream cheese
80g salted butter
250g icing sugar
½ tsp vanilla essence

Method



1. Start by making the dough, combine all the ingredients for the dough in the food processor.
2. Finish combining the dough by hand on a clean work surface.
3. Leave the dough to prove for 1 hour.
4. Make the filling by combine the ingredients in the small bowl of the food processor. Leave the mixture to one side.
5. Once the dough has proved roll it out and spread over the filling. Roll the dough up and cut into 12 even portions.
6. Place into a high baking tray and leave to prove for another hour. Pre heat the oven to 180°C.
7. Pour the double cream over the cinnamon buns and bake for 20-22 minutes.
8. While the cinnamon buns are baking, make the cream cheese frosting.
9. Combine the all the ingredients in a bowl and whisk until smooth.
10. Take the buns out the oven and leave to cool for 10 minutes. Now spread the frosting over the buns.
