Try this fail safe recipe for a gooey chocolate treat, which is the way we like them. The key to success is to use a good chocolate but not so high in cocoa solids as that can make them more crumbly.

Ingredients

120g best chocolate, at least 51% cocoa
2 tbs cocoa powder
120g butter
2 large eggs, beaten
240g granulated sugar
60g plain flour
1 teaspoon baking powder
Pinch salt

Pre-heat oven to GM4, 350°F, 180°C, 160° Elec Circo

Method

1. Break chocolate into pieces and melt in a bowl over saucepan filled with simmering water. Add cocoa powder and butter.

2. Stir mixture occasionally. When melted, remove from heat and add to other ingredients. Mix thoroughly.

3. Pour into lined square tin (20cm by 20cm) and bake in centre of oven for 30 minutes. The brownies will be ready when the mixture has sunk down. They should still be gooey.

4. Allow to cool before cutting into squares.
