When Nigella Lawson was pictured, dripping seductively in salted caramel, you may well have thought: enough now. Alas, our love affair with salt and sweet shows no sign of abating.

Compelling, beguiling, and, according to Nigella, “the class A drug of the confectionery world”, when it comes to salted confectionery, we are as weak and self-indulgent as the next person.

As an antidote to the January detox, and to get us through grim March, here are some of our go-to sweet and salty recipes.




Nigella Lawson: Bacon Brownies

The world’s number one fan of salted puddings has successfully made the case for Bacon Brownies with this fabulous recipe.
She says: “These sound odder than they taste. Think deep, dark, fudgey chocolate, flecked with caramelised salty shards.” Sold.




David Leibovitz: Salted Caramel Ice-cream

The author of “Perfect Scoop: Ice Creams, Sorbets, Granitas, and Sweet Accompaniments”, David Leibovitz, advises using a good quality salt such as fleur de sel for his epic Salted Caramel Ice-cream.
He says: “It’s not difficult to make good caramel but the secret is to cook it far enough so it’s slightly burnt. You want to take the sugar right to the edge of darkness, then stop it there with the addition of a few cubes of salted butter.”




Jamie Oliver: Rich Chocolate Tart with Salt Flakes

According to Jamie, this beautifully smooth salted tart is “easy to knock up but the addition of salt magically brings out the sweetness”. Amen.
Trudy from blog, Mediterrasian Kitchen is a big fan of miso in puddings. She says: “Don’t knock it until you’ve tried it! Sweet dishes are often balanced by a touch of salt, and miso adds a unique depth of flavour and subtle saltiness to this recipe.”
