Trisha Jones is a young blogger, originally from Kenley, near Croyden, now living in Berlin, whose charming blog Sugar Thumb has caught our eye for its excellent photography and mouth-watering recipes centred around her great love of baking. As a special Christmas present to The Good Web Guide, she’s created a special festive recipe – a delectable Cranberry and Marzipan cake – that’s a perfect tea-time treat after a wet, windy and wintery walk this Christmas.
Christmas Cranberry and Marzipan Cake by Trisha Jones of Sugar Thumb
Used in moderation, good quality marzipan doesn’t taste artificial and horrible; it just tastes like deliciously sweet almond, which I love! Cranberry, meanwhile, is a classic Christmas flavour, and the combination of these two ingredients, paired in this festive cake, works really well.
INGREDIENTS
300g butter
400g caster sugar
4 eggs
400g self raising flower
100g Marzipan
50g almond flakes
500 ml Double cream or Quark
500 ml Cranberry sauce/jam
METHOD
1. Preheat the oven to 180°C and grease two identical round cake tins.
2. With a mixer, mix together the butter and caster sugar until light and fluffy.
3. Chop the marzipan into very small pieces and heat for about 10 seconds in the microwave.
Add to the butter mixture and mix in thoroughly until there are no big lumps of marzipan left.
4. Add in the eggs one at a time and mix in thoroughly.
5. Sieve the flour into the mix and fold it in.
6. Divide the mixture equally into the two tins and sprinkle the almond flakes on ONE of the trays (this will be the top layer).
7. Bake for around 20 - 25 minutes until golden brown and until a skewer come out clean when the cake is poked.
8. Leave to cool for about 10 minutes and then remove from the cake tins and allow to cool further on wire cooling racks.
9. Once cooled, spread double cream and then cranberry sauce on the bottom layer and place the top (almond flake) layer on top.
