Traditional Cuban Mojo BBQ Pork

Mojo-marinated dishes are quintessentially Cuban. This Cuban classic is also great with chicken, shrimp or tofu.

INGREDIENTS

To make 1 cup of mojo marinade

1 head of garlic
1 tbs salt
12 black peppercorns (whole)
Oregano (to taste)
1 cup sour orange juice, alternatively use two parts orange to one part lemon and one part lime

METHOD

1. Using a mortar and pestle, mas garlic, salt, black peppercorns and oregano into a paste.

2. Scoop the paste out into a separate bowl.

3. Stir in sour orange juice.

4. Let the mixture sit at room temperature for 30 minutes or longer.

5. Use immediately or refrigerate for use later.

Marinate the pork in the refrigerator for an hour.

Remove your pork from the refrigerator and place on the BBQ or in the oven.

* Cooking time: Varies according to the weight and cut of pork.

Serve with mango and avocado salsa.
