Mummy's Corn Fritters

A much loved recipe from Kiddy Cook, popular with the kids and adults too.

INGREDIENTS


1 cup (150g) self raising flour
1/4 tsp salt
2/3 cup (165ml) water
1 egg, beaten
1 tin (210g) sweetcorn, drained
Vegetable oil, for frying

METHOD

Whack all the ingredients in a mixing bowl and beat like mad until there are no lumps.

Heat the oil in a pan (about 1cm deep) and fry heaped tablespoons of the mixture until tiny bubbles appear on the surface and the yturn golden brown (about 15 seconds each side).

Also very nice if you add chopped parsley or chopped onions.

Serve on their own or with bacon and maple syrup.
