Mango and avocado salsa
A delicious fresh tasting salsa, which works with barbecued meat and as a dip.
INGREDIENTS
1 large mango, peeled, diced
3 tablespoon red onion, minced
3 tablespoons diced green pepper
3 tablespoons diced red pepper
1 1/2 tablespoons white wine vinegar
1 tablespoon chopped fresh coriander
1 tablespoon olive oil
1 tsp. minced fresh chives
1/2 large avocado, diced
METHOD
1. Mix all ingredients except avocado in large bowl.
2. Add avocado to salsa and stir gently to combine.
3. Add salt and pepper to taste.
Serving suggestion: Spoon your salsa into individual gem lettuce leaves and enjoy.
