Low Fat Chocolate Brownies
There is no butter in these brownies but still plenty of sugar. However, the prunes provide the healthy bit but they are sticky.
Makes 12 squares
150g dried prunes
180g natural granulated sugar
3 tablespoons cocoa powder
60g plain flour, sieved
1 tablespoon baking powder
3 egg whites
18cm square cake tin
Preheat oven 180 C, Gas Mark 4
1. Whizz the prunes to a pureé with 3 tablespoons water.
2. Stir in sugar, cocoa powder, sieved flour and baking powder.
3. Whisk the egg whites until firm and fold into mixture. Pour into a lightly greased 18cm square tin.
4. Bake in preheated oven for 35 to 40 minutes.
5. Allow to cool before cutting.
