Butterscotch Brownies

Not strictly brownies as these are a delicious golden colour and there is no chocolate in sight. Make sure you use unrefined Demerara sugar, the flavour will be much fuller.

Makes 16 squares

90g butter
180g Demerara sugar
1 large egg
1/4 teaspoon salt
120g plain flour
1 teaspoon baking powder
1 teaspoon vanilla extract (optional)

20cm square cake tin
Preheat oven 180 C, Gas Mark 4

1. Melt butter in heavy pan. Allow to cool and then beat in the remaining ingredients, sifting the flour and baking powder together first.
2. Pour into a lightly greased square baking tin and bake in preheated oven for 35 to 40 minutes.
3. Don't overcook, they are better slightly squidgy.
4. Cool and cut into squares.
