This is just too delicious for words. Baked radicchio with bacon and cheese. Go for the English option and use bacon and Stilton or go Italian and use Parma ham and Dolcelatte or Gorgonzola. Be guided by whatever is in your fridge.

Baked radicchio with bacon and cheese

Serves 1

1 head of radicchio
3 to 4 slices of bacon/Parma ham
Lump of Stilton/Dolcelatte/Gorgonzola
Olive oil

1. Remove the damaged outer leaves of radicchio. If it is enormous it will feed more. Cut into quarters and place in an ovenproof dish.
2. Cut bacon/Parma ham into reasonable sized strips and place over radicchio.
3. Crumble cheese. 50g is about the right mix but you might be greedy and like to use more. Sprinkle over radicchio.
4. Generously dribble over olive and oil and put in a preheated oven at GM7, 220C, 425F for 10 minutes.
5. Serve immediately with warm bread, ciabatta if possible and mop up the oil in the dish. You could add a dash of Balsamic vinegar but try it and see.
