The Organic Smokehouse

The Organic Smokehouse is situated in Clunbury, near that mecca for food lovers, Ludlow. They have been winners at the Organic Food Awards and are one of Rick Stein's Food Heroes.

Rather than making smoking part of the food process, this smokehouse believes smoking to be the continuance of an ancient craft, which yields an addition to the overall flavour of a product, rather than providing a substitute taste. They use the traditional draft method with air-dried naturally fallen Shropshire oak. It's a slow process but gives the end product great depth.

They have turned their hand to smoking some interesting ingredients, all of which can be bought online. Alongside smoked salmon, you will find smoked olive oil, smoked Halen Mon sea salt, which complements roast vegetables wonderfully, smoked butter (great with mashed potatoes), and cheese (Parmesan, ricotta from Sussex and Cheddar). All organic, of course.
