This smokery in Somerset specialises in smoking eel and a variety of other smoked foods (chicken, duck, salmon, trout). Their eels are smoked with beech and apple wood in small scale batches and to order. Smoked eel works well as a no fuss first course and Brown and Forrest recommend serving it with rye bread and beetroot relish. The smoked lamb, marinaded in garlic and ginger, is particularly popular in the restaurant.
