Xanthe Milton is otherwise known as the Cookie Girl, who has been delighting Notting Hill inhabitants with her regular column in The Grove magazine. Cupcakes may have been around for a while now but Xanthe's Eat Me! takes them to a new level. Xanthe bakes through the seasons with recipes for every occasion. Thinking outside the box, she has made the recipes all her own. There are no copycat offerings here. There are rich red velvet cupcakes with a swirl of vanilla icing through and for the coctail hour, Margarita cupcakes with a tequila and lime filling with lots of recipes imbetween that appeal to younger taste buds. Take the summertime treat of 99 cones; Xanthe cooks sponge mixture in the cone, then tops with Mr. Whippy style icing and finished off with a chocolate Flake.
TIPS AND TECHNIQUES
You'll find some useful baking tips too. If you fancy making cupcakes in the shape of hears, there is no need to buy a special cupcake tin when you can just as easily use a marble. Place a marble into each hole in the tin between the papercase and the tin itself. And even mastering the technique of icing looks simple when you follow Xanthe's advice.
