Ryland Peters & Smalls Latest Publications
Ryland Peters & Small little but large series can always be relied upon for good recipes. Each book has interesting recipes, with great photography to match. They would make excellent presents, either individually or as a set.
With the renowned Danish-Australian writer, Elsa Petersen-Schepelern, being the author of Grill Pan Cooking, Salads and Smoothies and Shakes, you need look no further for inspiration. Elsa's books are always full of good ideas and her latest three are no exception. With useful advice and mouth watering recipes, work through these books and you will soon find favourites. To give you a whistle stop tour of these three new books, the GWG has put together this menu. Start with Indonesian gado-gado, a crisp salad with peanut sauce, followed byTuna with tea-smoked tomato sauce. Elsa is obviously very pleased with her sauce and warns that it is so good, you will never be able to make enough. Tomatoes are smoked in a foil-lined wok with lapsang souchong leaves, cardamom pods, orange and onion. Round off your meal with a blueberry ice cream smoothie.
Dim sum is the Chinese for heart's delight and so these little morsels are. The beauty of Fiona Smith's book is that she explains everything so clearly. The recipes, although fiddly and time consuming, are easy to follow and once you get into your stride, with all the ingredients to hand, you can churn them out. Also if you are buying all the ingredients, you might as well go to town and make plenty. She suggests the things that can be frozen ahead of time. The recipes extend beyond China to the street food of Thailand, Vietnam, Malaysia and Japan. Don't forget that dim sum makes good picnic food as it can be eaten in fingers and there is no need for plates. We like the Szechuan chicken steamed buns, a fluffy dough encircling honeyed chicken. Or try salmon and Asian pesto parcels wrapped in rice paper. Asian pesto is Fiona's own creation. It is a mix of cashew nuts, coriander, Thai basil, garlic and peanut oil.
Risotto has been written by Ursula Ferrigno. Ursula is a leading light on Italian cuisine and last year saw the publication of Truly Italian, a delicious vegetarian cookbook. With a risotto recipe for nearly every day of the month, you should really try every one. They are all vegetarian but don't let that put you off. There are recipes here to fill you up, play with your palate and good comforters. Asparagus, pea and basil risotto is her favourite but we like the look of a gutsy combination of rocket and blue cheese or the delicate lemon and mint risotto.
Did you know that vialone nono is the rice favoured by the Venetians when making risotto. It is deliciously creamy but retains bite. Or the fact that sage has memory enhancing properties?
We must mention the photography in these books. It is outstanding. RPS certainly know what they are doing in creating these quality books. They make excellent presents or if you have a passion for …….
