Once upon a time a hipster in Shoreditch did something crazy. He mashed up some avocado on toast and put a poached egg on top. Soon, no self-respecting brunch menu was complete without avocado. A new generation of ‘clean-eaters’ started tweeting and blogging about them. They popped up all over Instagram and Pinterest. Mothers started weaning their babies on them. They appeared chocolate puddings and ice-cream. A food trend had been born.

Alas, our days of profligate avocado-consumption may be coming to an end with the shock news that avocado prices have hit their highest level on record thanks to a global shortage.

And so, to pay tribute to this once-humble fruit before it disappears from our brunch menus forever, we’ve rounded up some of our all-time favourite avocado recipes. All hail the avocado!

Avocado on Toast with Poached Egg (and optional kale tapenade) by Hello Glow


The original and the best, you can’t beat a mashed avocado on toast (sourdough, obvs) topped with a runny (free-range) poached egg, but this recipe from Ana Stanciu of Hello Glow takes it to the next level with seeds and a superfood kale tapenade to really up the health quota.

Chocolate Avocado Mousse by Hemsley + Hemsley


As any mother who has mashed together avocado and banana for their baby will know, these ingredients go surprisingly well together. Also fans of mixing avocado into sweet dishes, The Hemsley sisters’ book The Art of Eating Well features a fab avocado cheesecake recipe as well as this one for chocolate avocado mousse. It’s all about the frozen banana, darling.

Courgette Noodles with Avocado Pesto by Eat Yourself Skinny


Avocado. Tick. Spiralised vegetable. Tick. Yup, this recipe is about as millennial as they come. But we kind of love it. And the creaminess of the avocado pesto belies the kick-ass health factor of this recipe. Thank you, Eat Yourself Skinny. Perhaps we will.

Crispy Avocado Fries by The Kitchn


So those “ripe and ready-to-eat” avocados you ordered as part of your weekly online shop turned out to be anything but. Never mind. You can make these avocado chips. Crispy and crunchy on the outside, creamy on the inside. Dip them into a spicy chipotle ketchup or basil mayonnaise and revel in the fact that you are not carb-loading on ‘real’ chips.

Velvet, silken and rich, avocado works surprisingly well in ice-cream thanks to its high fat content. If you love avocados and you love ice-cream, this recipe from Jamie Oliver offers something a bit different to your strawberries and vanillas. Proof, if ever there was, that there is nothing that avocado won’t improve.
