The serious business of lamb with heaped teaspoons of mint is for later in the day, as is the all-important egg hunt, chocolate feast and the solemn teatime tucking into the marizpan-topped, fruit- and biblically allusion-rich simnel cake. But what of breakfast? With all that feasting to come, you might be tempted to do away with the idea altogether.

We would urge you not to. After all, what better day to start the right way, by which we mean, with an egg-stravaganza. Protein-packed and perfect in just about every way, we advise them for a variety of excellent reasons, namely: they will keep you full for the flurries of activity in the kitchen and charging about the garden ahead; they may just act as ballast to all that aforementioned sugar, saving us from gorging on too much chocolate later on; and in all likelihood, there are probably tons of them lying around, not least in the aftermath of the requisite blowing and decorating sessions for the Easter tree.

These are the egg-based Easter breakfast feasts we shall be rustling up this weekend.

Coddled Duck Eggs With Smoked Haddock And Spinach

If a thing is worth doing, then it’s worth doing well. And what better egg recipe to kick start your Easter Day with than a duck egg recipe? Given the sugar high we will all be riding the inevitable crest of later, a special savoury breakfast is just the thing. We love the punchy flavours involved: the salty smokiness of the soft smoked haddock, the gentle flavour of the eggs, and the lifting freshness of the chives. If you’re kicking off Easter proceedings with this, we’d say you’re in for a good day ahead. Get the recipe.

Soft-Boiled Eggs With Deviled Soldiers

Boiled eggs and soldiers are a classic for a reason. Dunking toast into the perfect sunshiney yolk is a childhood tradition that loses none of its appeal as we move into adulthood. However, if you are looking for a punchy twist on this excellent breakfast, try the toast paprika mayo-griddled for a good bite to fire yourself up for the day’s delights. Get the recipe.

Bill Granger's Potato And Feta Fritters With Smoked Salmon

The late Bill Granger was an absolute master in the art of creating the ideal brunch, as these potato and pea fritters roundly attest. Crispy, herby and bound with two eggs, the tangy feta, fresh peas and luxuriant salmon work as a masterclass in well balanced taste and texture. Sublime – and equally great for serving at any meal of the day. Get the recipe.
