From Muoi Khuntilanont's Thai Kitchen

Colonel Ian Khuntilanont-Philpott died in 1998 but not before he and his wife, a professional chef, became web food legends, he carefully and lovingly published her authentic recipes on the Thailand Food pages. This site is a reconstruction of the original by chile enthusiast Chet Bacon. The recipes are roughly in alphabetical order, but this is of little use if you don't speak Thai, although translations are provided alongside. There are some glitches with the recipe headlines. The design is very straightforward with few images, so the speed is relatively fast. Scroll down past the introduction for the long list of recipe names and themed menus. Make the text larger if necessary and click on the item you want to see. Special Features Recipes A word from the late Colonel: 'My wife is a professional chef and measures quantities in pinches, small and large piles on the palm of her hand, and handsful...However, experimenting with her measures, I have converted them to more meaningful quantities...Thai charcoal braziers don't have thermostats and few Thai chefs use a clock; the food is cooked when you are happy with the result.' Although the dishes are not all difficult to make, if you are unconfident in the kitchen and prefer to follow step-by-step recipes, this site may not be for you. Hunting down rare ingredients such as pickled mud fish also presents a challenge.
